1 kg fresh tomatillo’s
1 onion chopped
5 cloves of garlic
bring to a boil: tomatillo’s, onion & garlic in 5 litres of salted water (our chef says “toss in a handful of course salt”)
remove from heat
get out your handy dandy hand blender & blend
toss in a handul of fresh cilantro
viola – serve!
