In all honesty I haven't had one thing off the menu at the Rock Salt that I didn't love. I am partial to their bennies for brunch though. The type of Bennies change every week so I can order the same dish and never get bored.

Brunch idea...
The Eggatatta:
It's basically a fritatta with a potato crust.
Make mashed potatoes with seasonings you like.
Put diced local zucchini and some local herbs in with the eggs, top with grated moonstruck cheese. You could put bacon in it too.
Spread the mashed potatoes into deep baking dish and up the sides, pre bake crust until just brown, put egg filling in and cheese on top and bake.
The potato crust keeps the egg from having the bitter reaction with the side of the baking dish.
Serve with toast (sourdough would be my choice), fresh greens and salsa.
Made it this morning and it was delicious!

I am thinking about an omelette with goat cheese and yams, how about a little basil, maybe some pesto homefries and some really nice rye toast, maybe a grilled tomato.

Our daughter will visit from Toronto and her friend from Nanaimo on Labour Day weekend. Brunch at the Rock Salt would be nice.

I'm gluten and dairy free so my choice would reflect those needs. I would really like a spinach salad with 2 poached eggs, Adam's sprouts or mushrooms, raw goat's milk Feta and some candied beets (roasted in foil). Serve this with a couple pieces of gluten-free toast drizzled with olive oil and I'm in heaven.

I love brunch! It's our favorite meal to go out for, or eat in! My husband always asks for my Eggs Benny, as he loves my hollandaise sauce, but a perfect bruch to me would involve me not cooking it or cleaning up!
A chorizo sausage, sundried tomato and cheddar cheese frittata, served with a side of fresh made salsa and sourcream. On the side, peppered bacon wrapped asparagus bundles roasted... and a fresh fruit salad with mango and cherries... so good right now. I feel like their needs to be some lime in here too... mmmm

Base (kinda like a pizza):
eggs (whipped w/wee bit o' water, salt, pepper)
cooked through, then...
Top with:
fresh chopped spinach, sundried tomatoes,
roasted garlic, roasted red pepper, artichoke
hearts, viy onions...choice of italian sausage
/or bacon bits...
Drizzle with balsimic vinegar, chopped basil and
crumbled feta cheese (local always good), and a
kiss of cheddar
Broil for 2 minsor so

Our favourite weekend breakfast is French Toast made on Sunday, with the leftover challah I have made on Friday for the Jewish Sabbath. It usually has raisins in it, and is made with honey, so it is a very sweet bread to start with (brioche would work nicely too); then the cooked toast is topped with toasted hazelnuts and fresh blueberries...... and of course real maple syrup. A side of sausage would make it a full "brunch" treat!

My idea would involve crepes. Maybe a crepe stuffed with seafood and a dessert one stuffed with blackberries. Nothing beats an eggs benedict though - maybe with fresh crab???
I LOVE brunch and I love the ROck Salt banana bread french toast!!!!!
